|Herb Chicken Burger with Chilli Jam|
Herb Chicken Burgers Recipe
500g lean chicken mince
4 rashers of short cut bacon
1/2 cup Panko breadcrumbs
1 tsp Mushroom Man smokey bacon mushroom spice (optional)
2 tsp oregano
2 tsp tarragon
2 sprigs of spring onions finely chopped
1 tbsp oil
salt and pepper
4 slices of cheese
4 bread rolls buttered
Hank’s Chilli Jam
- Mix chicken mince, breadcrumbs, oregano, tarragon, spring onions and seasoning in a bowl. Add a pinch of salt and some ground black pepper to your liking. Once everything is mixed in thoroughly, divide the mince mix into four portions and shape into patties.
- Heat the oil in a large non stick frying pan and cook the patties for about 4 minutes on each side or until golden brown and cooked through.
- In a smaller pan, heat a little bit of oil and cook the bacon rashers to your liking.
- Have the bread rolls buttered and ready to build a burger. Place some mixed lettuce on the base of each bun then top with bacon, chicken patty and a slice of cheese. Spread some Kewpie mayo over the top and add a generous dollop of Hank’s Chilli Jam. Serve with a side salad or fries.
